Aubrey Allen have been serving the Warwickshire public the finest meat since 1933. We carefully select and inspect all of our suppliers and can trace our meat from farm to plate.
We’re renowned for our meat, including granite grassland reared Cornish lamb, corn-fed Loire Valley hens, and free-range pork produced by Pig Farmer of the Year Jimmy Butler.
But we built our reputation on the quality of our beef, sourcing only the finest Highland cattle. Some of it even comes from Ballindaloch Castle itself, home to the oldest Angus herd of all, where the cattle graze on ancient pastures, drink pure Highland water, and come winter time feed on the barley draff from local distilleries. We leave our beef to hang on the bone for as long as three or four weeks and the result is the tastiest, most tender beef around.
It’s no surprise, then, that the Roux Brothers have described the quality of Aubrey’s Allen’s beef as “unrivalled”.
Set up initially on a micro scale, Upton Smokery has grown rapidly due to the quality of the food we produce. We now supply a broad range of oak and beech smoked meat, game & fish to the public, pubs, restaurants, hotels, catering butchers, catering companies, wholesalers and distributors.
It remains, however, a well established, family business located near Burford – the gateway to the Cotswolds. This location puts us right in the heart of England with easy access to busy town centres and surrounded by a rich myriad of fine eating establishments for which the Cotswolds is renowned.
Our traditional process involves salt curing, chilling, slow & cold smoking, then hot smoking to finish using oak, beech and sometimes apple wood. We do not use artificial colourings, flavourings or preservatives in any of our smoked produce – the only ingredients are pure salt, water and natural smoke.
