The prime Hereford Beef from University Farm, Bledington served in our restaurant is hung for 28 days to bring out its true flavour. We also have personal contact with all the gamekeepers in the area. Pork, lamb and poultry, meanwhile, are ordered from Aubrey Allen, who are able to offer full traceability. Other trusted suppliers include the family-run Upton Smokery near Burford and A M Bailey of Evesham. Our cheese suppliers, Fromage to Age are based locally and focus on providing us with cheeses that are native to these Isles .
Of course, for fish, we have to go a little further afield. Fresh catches arrive daily from Devon and Cornwall and make a huge difference to the taste experience that our guests enjoy. And whenever you stop off for lunch or dinner, you can be sure of imaginative, seasonal dishes that are produced from some of the finest ingredients.
